Soya Chunks / Soya Granules is Textured or texturized vegetable protein (TVP), also known as textured soy protein (TSP), soy meat, or soya chunks is a defatted soy flour product, a by-product of extracting soybean oil. It is often used as a meat analogue or meat extender. It is quick to cook, with a protein content comparable to certain meats, and its 100% vegetarian. Cooked TVP can be prepared or used in many dishes , so tasty, delicious and absolutely healthy. With soya chunks / granules you can make this dish that are both healthy, and tasty. The highest source of protein in TVP is equal to consuming many servings of cooked daal, boiled eggs, and drinking more glasses of cows milk!

What is the difference between soya chunks and soya granules?
Soya chunks and soya granules are the same, the only difference between the two is their size and its in different forms. Soya chunks are bigger in size than soya granules. Soya chunks are about the size of a dice ( in a game), whereas soya granules are about the size of small pellets. In addition to chunks and granules, textured vegetable protein is also available in different forms.
Where to buy Soya Chunks Or Soya Granules ?
Usually I buy Soya granules / soya chunks from Indian Store. Nutrela brand is good from Indian market, but you can buy other available brands too. Soya granules / chunks is also available in online Amazon, or in any leading grocery store. Bob’s Red Mill brand Textured Soy Protein is also good.
Note – I do not recommend using Textured Soy Protein Powder as a substitute for soya granules / chunks .

Step by step pictures of how to prepare the soya chunks and soya granules
To cook soya granules – ingredients required : 2 cups soya granules , 4 cups water and 1 pinch of salt. First boil water in a pot, let it boil well, then switch of the flame. Add the soya granules and salt , stir well. Soak the soya granules in the hot boiled water for THREE minutes , drain the hot water , add cold tap water , rinse using your hands .
Now take a handful of granules in your hand ( best way to remove excess water), SQUEEZE THE EXCESS WATER FROM THE GRANULES ( make sure to press firmly and remove the water from granules).
Note – add salt only if you’re making savory dish. For making sweets / desserts – then you can skip the salt.
Alternative way to drain water instead of using hands – pour the boiling water with granules into a fine meshed sieve , then show the mesh in under the tap water and rinse it. Use a tablespoon / flat bottomed spatula and press hard the granules and remove excess water (use fine mesh sieve for better results).

Take water in a pot, bring the water to boil, then add the soya chunks into the boiling water, and stir well. Add a pinch of salt to it. Return to boil, and cook for 2 – 3 minutes ( size of the soya chunks will increase in size when cooked). Then switch off the flame. Drain the hot water from the pot , and fill with cold tap water, and rinse chunks using your hands in cold water 2 to 3 times. Now take a handful of chunks using your hand, SQUEEZE THE EXCESS WATER FROM THE CHUNKS ( make sure to press firmly and remove the water from chunks).
You can now use the whole soya chunks in the dishes as it is. Or you can chop it into preferred smaller size by using a knife or mince it using a mixer ( make sure to only whip the mixer once or twice to break it down , don’t grind too much, because the texture is very important). Now you can use it in the dishes as the recipe call it .
Note – add salt only if you’re making savory dish. For making sweets / desserts – then you can skip the salt.

Notes
- If you're mincing the soya chunks in the mixie / food processor , make sure to only whip it once or twice ( just until whole soy chunks pieces breaks down) . Do not run food processor for too long, as it will become into a paste and you will loose the texture of the soya chunks.
- To give a good flavor for the soya chunks - while boiling the water you can add 1 or 2 tsp of milk and then boil chunks .
- Best way to remove excess water is by using your hands. So the water is completely removed. But if you wish to use a sieve , you may use it ( there will be some water in the granules / chunks).
- Add salt only if you're making savory dish. For making sweets / desserts - then you can skip the salt.
- Only soya chunks needs to be cooked in the boiling water. For soya granules, it is enough if you soak it in the hot boiled water.
