Absolutely Soft – Fluffy Greek Yogurt Oat MINI Pancakes Is Healthy And Flavorful. Can Be Made Less Than 15 Mins. Tips To Make Perfect Mini Pancakes. Kids Friendly Recipe.

This version of mini pancake is a great way to make your morning breakfast more fun. It is very simple recipe to make. These minis are attractive, easy bite sized pancakes for kids. Adding Greek yogurt makes the pancakes soft , fluffy and moist. Flavored yogurt gives a rich flavor to the pancakes.

In fact I brought less sugar Greek yogurt for my toddler and he refused to eat. After many tries , I gave up . Expiry date was running low so I had to use it some way. That is how I ended up making these pancakes using yogurt. I followed the recipe I make for traditional pancakes. Sometimes I alter the recipe with flour variations to full all purpose flour , half and half of all purpose – wheat flour or fully wheat and instead of adding two cups of milk and butter , I added yogurt and less milk to this recipe.

Greek Yogurt or Regular Yogurt

Greek yogurt that has been strained to remove most of its whey, resulting in a thicker consistency than unstrained  yogurt. Since Greek yogurt has a higher concentration of milk solids than regular yogurt, it also contains a greater amount of protein. So I like to add greek yogurt when making it for kids.

Coming to flavored or plain Greek yogurt – any flavor you add will of course, give your recipe an added touch.

Instead of Greek Yogurt you can add any yogurt – plain , flavored , full fat , low fat to your preferences.

Adding Sugar To The Batter

I used less sugar Greek yogurt so added few tablespoons extra. Also adding sugar will make softer, less rubbery, less elastic pancakes. Sugar will also aid in browning. Do not completely skip the sugar , Instead add at least 1 tablespoon of sugar to the batter.

How To Making Mini Pancakes?

I used a bottle with small nozzle dispenser ( which I use to make jalebi – indian sweet dessert) to make the mini pancakes. Picture of the dispenser shown below.  It is easy to pour the batter and you have better control of dispensing the batter.

But if you do not have this you can use a pastry bag fitted with small sized nozzle tip to make the minis.

Alternatively pancakes can be made in traditional way by pouring a scoop of batter using the ladle onto the hot griddle .

Toppings To Go On The Pancakes

Simple pancake syrup , chopped fresh fruits like banana -strawberry – blueberry , jam preserves can be served with the pancakes.

Step By Step Pictures Of How To Make The Syrup

Ingredients Required – Measure the dry and wet ingredients separately and set aside. Wet Ingredients – greek yogurt , milk , vanilla extract and eggs. Dry ingredients – All purpose flour , quick oat ,salt ,baking powder and sugar

Making The Oats Flour – Use only quick / instant plain oat. Take the oat in a mixer / food processor and blend until smooth – fine powder.

Mixing The Pancakes Batter

Take all dry ingredients -all purpose flour , oat flour , sugar, salt and baking powder in a fine mesh strainer and sieve for two to three times. Set aside.

Whisk the eggs in a wide bowl and add greek yogurt , milk and vanilla extract and mix until smooth.

Now add wet ingredients to the dry and stir JUST until combined. Pancakes batter is ready.

Making The Pancakes

To Make MINI Pancakes – use any small nozzle bottle dispenser (see picture below) / pastry bag fitted with small nozzle tip. Fill the pancake batter into the dispenser. Heat the griddle / pan in low heat / flame only. Once hot brush some butter on the pan . Dispense the batter slowly on the heated griddle into preferred pancakes size and cook until you see small bubbles on top.

Flip each pancakes carefully and cook until slightly browned and cooked. Repeat until the batter is used. Alternatively pancakes can be made in traditional way by pouring a scoop of batter using the ladle onto the hot griddle . Serve the pancakes with any topping you prefer or with pancakes syrup.

Notes

*Can skip oat flour and make the pancakes with full all purpose flour.

*Make sure the Baking powder is within the expiry date because, it is responsible for making soft and fluffy pancakes.

*Whole milk can be alternated with low fat milk or even almond milk.

*Quick Oats can also be replaced with old fashioned oat or Instant oat.
