Which Gives Best Flavor – Salted Or Unsalted Pistachio?
I have tried Making Pistachio Cream / Spread using both salted and unsalted. Both tastes equally great and follows the same recipe to make the pistachio cream / spread.
If you like the salted nut flavor ( personally I prefer this) ,then remove the outer hard shell and use the nuts . To skip the salt part of it , then go with regular unsalted pistachio.
Consistency Of The Pistachio Cream
It totally depends on individuals personal preference. If you need it to be more spreadable consistency then increase the quantity of hot water to the recipe when grinding the pistachios ( ADD 1 -ONE Tablespoon at a time to control consistency).

Storing And Shelf-life Instructions
After preparing the pistachio cream , store it in a clean- dry air tight glass jar/ container preferably. It stays good up-to two to four weeks . Store it in the inner side of the refrigerator , away from the door. Use a clean dry spoon when using it every-time and refrigerate any leftover immediately.
You could also freeze it in a airtight box or a zip-lock. Stays good for up-to two months . Thaw it to room temperature and use it.

Making The Pistachios Cream
Take a mixer / food processor and add the pistachios nuts and grind the nuts into a fine powder.
Now add the powdered sugar and olive oil and 1 tablespoon of hot water and grind to coarse texture. Every time you open the mixer, make sure to scrape down the sides and bottom .
Add the remaining hot water and grind until to the smooth creamy consistency ( paste needs to freely blend in the mixer). Store and use them in required recipes.

*Do not skip oil in the recipe, it gives smooth creamy texture to the pistachios cream. Also adding few tablespoon extra oil gives more shelf-life.
*Use only powdered sugar . It gives a very mild sweetness to the pistachio cream and helps in texture too.
*You can skip the powdered sugar and make it sugar free too.
