Chipotle inspired veggie burrito bowl with the homemade cilantro lime cauliflower rice is an quick and easy wholesome food. Great alternative to take out that can be made in just about 25 minutes ( includes 15 minutes to make the fajita veggies in air fryer, and 10 minutes for cauliflower rice in Instant pot). The vegan bowl bursts with flavors from fajita veggies, roasted corn – black beans , placed over bed of cilantro lime cauliflower rice, and topped with freshly made guacamole. This is perfect for busy weeknights or for meal prep. Recipe includes instructions with stepwise pictures and a video, and meal prep instructions.
This bowl of goodness makes it easier on your wallet too, you spend less and eat more! Its so easy and handy with the fajita veggies and rice , you can eat them in many ways. When you meal prep, you’ve an option to eat it more than one meal, but in a different way. We eat them as a rice bowl for one meal , wrap/ burrito or a taco for another meal.
With air fryer, veggies get perfectly roasted in less time. The roasted vegetable texture is perfect for many dishes. I always pre cut my vegetables, and refrigerate it in a ziplock or in a air tight box. So its much easier to just pull them out from the fridge, season it , and roast them in air fryer. I make both cilantro lime rice and roast veggies simultaneously in just 10 minutes (that’s why I prefer having air fryer and Instant pot separately , instead of using Instant pot duo crisp lid model).
What all you can add to your burrito bowl?
- Corn – I used canned corn and roasted it in air fryer. You may use fresh corn too and roast it in air fryer with other veggies.
- Black beans – In this this recipe I used canned black beans , I roasted it with other veggies in air fryer to heat it (optional). If you’re using dry black beans , soak over night in water or one hour before cooking in hot boiling water . Then pressure cook and add it to your bowl.
- Bell peppers – Use any color bell peppers , remove seeds and cut into lengthwise , season it and roast it .
- Onions – I used red onions ( preferred) , but you can use other color onions too. Cut them lengthwise and roast.
- Tomatoes – Preferably Roma tomatoes , chop them into cubes and add to your rice bowl / salsa.
- jalapeno – Remove seeds if you want it less spicy and cut into rounds and roast it.
- Lettuce – Chop it into lengthwise and add it to your bowl .
- Rice – I made cilantro lime cauliflower rice ( see below for recipe link). You can also alternate it with white or brown rice.
- Cheese – I made it vegan , so skipped cheese in my burrito , you can add Mexican blend cheese.
- guacamole ( Avocado ) – Use ripe avocado for best taste ( see below for making guacamole).
- Salsa – I made fresh tomato , onions and cilantro salsa. You could use store brought salsa instead.
- Sour cream – This is optional , use sour cream or plain flavor greek yogurt for extra toppings.
- Proteins – Add mushrooms , tofu or any other meat. Cook or grill it separately and add it to your rice bowl.
How to serve the burrito bowl?
You can choose to serve the burrito bowl in two ways. First way – you could serve all the ingredients separately in different bowls , and build your own bowl by choosing the ingredients you want. Second way- In a individual serving bowl, layer the rice on the bottom by spreading it evenly , then add a layer of fajita veggies , roasted corn , black beans ( if serving any protein, layer it next), and finally top it with guacamole / sour cream.
Cilantro Lime Cauliflower Rice is a healthier version of the much loved rice. It’s a delicious low- carb /calorie, gluten – free dish , and definitely a great substitute for rice. So quick and easy to make this cauliflower rice with Instant pot in just 10 minutes ( cooking time is only 5 minutes) . This recipe will serve 4 people. If you want to double, then increase the serving size in the recipe card below and follow the measurement. Air fryer roast temperature and time to cook will remain the same. Roast /cook in two batches so the veggies get cooked evenly.
Serving Suggestions
Serve the fajita veggies , roasted corn and black beans , cauliflower rice and guacamole as a rice bowl, make your own burrito with flour tortilla , tacos , or add your favorite meat / tofu and enjoy. If you don’t like cauliflower rice then substitute it with white or brown rice.

Storing and reheating
Store any left over in the refrigerator, in a clean air tight box . Make sure to cool down to room temperature after cooking , and then refrigerate. Its stays good for up to a week in the fridge. I’ve not tried to freeze it so I’m not sure how long it’ll stay good in the freezer. To reheat, microwave covered (else it will become dry) for one or two minutes depending upon the quantity or just until warm ( not too hot) .
For Meal Prep
- Make everything ahead of time ( including veggies and cauliflower rice).
- Cool down completely to room temperature.
- Portion them into individual grab-and-go boxes (either use already partitioned boxes or separate boxes) (you can mix together fajita veggies ( onions , bell peppers) , corn and black beans in one separate box. keep the cauliflower rice & guacamole separately in two small boxes).
- Refrigerate it to be eaten over the next few days. This is very handy for quick lunches or dinner and enjoy eating it from anywhere. ( I’ve not freezed it , so I’m not sure how long it would stay good in the freezer).

Step by step pictures of how to roast the veggies in the Air Fry
Canned corn , canned black beans, red, green bell peppers and onions chopped into lengthwise , jalapeno – remove seeds and cut into rounds , salt and oil. For making the guacamole – remove flesh of the avocado from the skin , smash it well with a fork, add salt , lemon juice , tomatoes, onions , and mix well. For fresh tomato salsa – Add chopped tomatoes, onions , cilantro to a bowl and mix.
Air Fry the veggies – I used Gourmia 8 -Quart Air Fryer to cook.
Preheat Gourmia Air Fryer to ROAST option to 400 F (once the pre heating is done, you’ll get a beep sound)( if you don’t have roast option, then set temperature to 400 F). While the fryer is preheating, cut a foil to place it inside the basket ( optional – prick few holes in the foil for air circulation). In a bowl add corn , black beans , red peppers , green bell peppers , jalapeno, onions , salt , oil and mix well to coat all veggies.
Once the fryer is ready, place the foil inside the basket, then spread the seasoned veggies – corn and beans evenly on the foil. Cook the veggies for 10 to 12 minutes or until the veggies are roasted, turns slightly brown in color, shrinks in texture( for even cooking and color – half way point , remove the basket and give a quick stir and place it back for cooking ). Remove the roasted veggies, and serve warm with cauliflower rice , fresh tomato salsa and guacamole .

Notes
- For seasoning the veggies - I only used oil and salt , but you could add fajita / taco seasoning .
- Other options you can include in your burrito bowl - Mushrooms , olives , roma tomatoes , lettuce, and cheese , sour cream.
- If adding tofu or any other meat , then season it , and use the roast option or 400 F and cook them separately ( do not include with veggies).
- Use a ripe avocado ( for best taste) for making the guacamole.
- Alternative for cilantro lime cauliflower rice - you can cook white rice or brown rice separately and add it to your rice bowl.
- I removed the seeds in jalapeno to make it less spicy. If you want it spicy, leave it with the seeds.
