Bang Bang Shrimp is a Bonefish Grill’s restaurants signature appetizer. Spicy battered shrimp is deep fried to crispy golden brown, and then tossed in a creamy, sweet and spicy flavored sauce, which gives an excellent flavor and addictive taste . Bang Bang shrimp can be made with fewer ingredients in less than 30 minutes time (deep frying the shrimp is the only cooking time). Recipe includes detailed recipe instructions with stepwise pictures and tip.
This is a popular Appetizer in bonefish grill restaurant, but most of the time we end up eating it as main entrée. Always we make it two orders of shrimp so we do not fight for it. When compared to the restaurant it is very budget friendly and you get more quantity too. This recipe is a perfect version of the bang bang shrimp.
I have read and seen many recipe and different version of this bang bang shrimp in tv shows, blogs . One main step in the recipe is to coat the shrimp correctly and frying them perfectly to golden brown. Many recipe I saw did not have good coating for the shrimp, resulting in shaggy-uneven body of the shrimp. I also tried few of those recipe and was not satisfied with the crunchiness and the spice levels. Thus ended up perfecting my own version and here you go.
Best Way To Use The Shrimp
I used Cooked Medium Sized Shrimp – Peeled And Deveined. Medium size shrimp is bite sized, not too small or too big. Precooked shrimp also saves time. Chopping the tail is optional, I left it because it is easier for my kids to hold and eat it.
I soaked the shrimp for five minutes before using it in the recipe, which is completely optional. In a bowl add few tablespoons of vinegar, 1 teaspoon of salt and fill water till the shrimp is immersed. After five minutes fully drain the water-vinegar and use it in the recipe.
Use A Good Brand Sweet Chilli Sauce
Sweet chilli sauce, also a main ingredient which gives that zing taste to the shrimp. So use a good known brand sweet chilli sauce. Some brand suggestions are Mae Ploy, Thai Kitchen or buffalo wild wings asian zing. If you are trying with any other brand sweet chilli sauces, please see reviews before using it.
Egg Coating
Many recipe calls for buttermilk instead of egg , but when I tried with homemade buttermilk I was not satisfied with the outcome. Also I added sriracha sauce with the egg which adds the perfect spicy coating to the shrimp . I highly recommend using eggs.
Getting The Oil Temperature Right For Deep Frying
Add enough oil to the kadai/pot/ deep fryer and heat the oil. Once hot, use a deep frying thermometer to check the right temperature for deep frying. Usually right frying temperature ranges between 325 F to 400 F. Oil should not get too hot, else shrimp will get burnt or if it is under temperature which may result in soggy and greasy shrimp.
Serving Suggestions
Once the shrimp is deep fried, place the fried shrimp in the serving bowl and drizzle the prepared sauce over the fried shrimp and serve or you could take few pieces of shrimp and toss them completely into the sauce and serve like I did. Place lettuce in the serving bowl before placing the shrimp (optional) and garnish with the chopped green onions or fresh cilantro. For best taste serve immediately.

Step By Step Pictures Of How To Make The Bang Bang Shrimp.
Measure all ingredients and keep it ready – Before starting the preparation heat enough oil in a deep pot / kadai for frying the shrimp. Ingredients required to make the shrimp – cooked shrimp peeled and deveined ( optional – clean the shrimp in white distilled vinegar, 1 teaspoon salt and water , soak 5 minutes and drain the water ) , all purpose flour , cornstarch , garlic powder, salt , pepper powder, sriracha sauce, egg, plain bread crumbs, fresh green onions – 1 stem chop the green portions into thin circles and enough oil for deep frying .
Ingredients for making the sauce – mayonnaise, sweet chili sauce, honey, sriracha sauce and lemon juice.
Mixing The Sauce
In a bowl , take all the ingredients under the sauce and whisk well to a smooth consistency.
Deep Frying The Shrimp
To coat the shrimp , First Mix all the dry ingredients except the bread crumbs in a bowl – All purpose flour , cornstarch , garlic powder , salt and pepper powder .
Beat eggs and sriracha sauce in another bowl . Spread the plain bread crumbs in a plate. Make sure to check the oil is at the right temperature before frying. Use a deep frying thermometer to check the right temperature for deep frying. Usually right frying temperature ranges between 325 F to 400 F. Oil should not get too hot , your shrimp will get burnt or if it is under temperature it may result in soggy , greasy shrimp.
Take ONE shrimp at a time, coat the shrimp in the flour mixture ( dry ingredients) and then dip the flour coated shrimp into the egg – sriracha bowl ( make sure the shrimp is dipped well into the egg) and finally coat them well with the bread crumbs. Drop the coated shrimp carefully into the hot oil , fry it for approximately two minutes or until nice golden brown color . Drain the shrimp on a paper towel to remove excess oil.
Fry two to three shrimps in a batch and do not over crowd. Repeat the same with the remaining shrimps.
Toss The Fried Shrimps Into The Sauce
Either place the fried shrimp in the serving bowl and drizzle the prepared sauce over the fried shrimp and serve or you could take few pieces of shrimp and toss them entirely into the sauce and serve. Place lettuce in the serving bowl before placing the shrimp (optional) and garnish with the chopped green onions.

Notes
*Do not wait too long to serve after deep frying the shrimp, Toss them into the prepared sauce and serve immediately. Crunchiness and taste of the shrimp is best when served this way.
*Make sure to coat well in the the three mixtures - flour , egg and bread crumbs. Else when you deep fry the coating will get separated in the oil.
*Do not crowd the shrimp while deep frying, I recommend frying two or three in a batch so you can fry them right to golden brown color.
*After dropping the shrimp into the oil , do not disturb or turn them immediately to the other side. Wait for a minute and then turn .
